Maple Cranberry Bourbon Glaze

This week I returned to my roots; to Northern Wisconsin and the family lake cabin. As per the tradition, there is plenty of food and family game time. There was also a visit to the local Cranberry festival in Eagle River, Wisconsin where we celebrated the local harvest. Needless to say, we managed to come back with a few pounds of these antioxidant rich, ruby red babies. I took this opportunity to use a few and come up with this tart and tasty glaze for our whoa-fully plain looking ham. The sweet and tart balance the ham’s salty smoke flavor and add a festive red color. This glaze can work on turkey or chicken as well.
What you need:
3/4 prepared cranberry sauce (2 cups fresh cranberries, 1/2 c. Water, 1 c. Sugar)
1/4 c. Maple Syrup
1/3 c. Brown Sugar
1/2 c. Bourbon

What you do:
Combine ingredients in a pan and warm gently to a low boil, stirring occasionally.
Meanwhile, cut ham with diamond pattern 1/4 inch into meat to allow glaze to penetrate.
When glaze has reduces by 1/4 and is a thicker paste, remove from heat and allow to cool.
Using a pastry brush, paint ham with glaze coating fully and evenly. Reserve some glaze to mop ham later in cooking.
Place glazed ham, flat side down, in roasting pan and cover with foil.
Cook covered in 325 degree oven for 15 minutes for every pound.
When 45 minutes of cooking remain, remove foil and cover with remaining glaze. Return to oven uncovered to finish cooking.
Slice and enjoy!
