Today was our first day to pick our first harvest of summer berries. Raspberries, Currants and Red Huckleberries are all ripe this time of year and our edible landscape is exploding with fruit.
We had a craving for seafood the other night, but not a lot of time to prepare an elaborate dish. Our local fish monger had just harvested some fresh mussels and from that and some other fresh, local ingredients, this quick, delicious dish was born! A tribute to my travels through the south of France and to the local foods available during the summer.
Gather up your favorite seasonal, local vegetables for this spread. I like using lots of colors and textures in the vegetable choices. Some of my favorites include carrots, asparagus, sugar snap peas, bell peppers, celery, broccoli and chilled potatoes. I serve them with a honey mustard dressing and it pairs perfectly with the acidity of Juniper Berry DRY Soda.
